croquette, hashbrown, or latke? What is in a name?


I honestly do not know what to call these, all I know is that they taste really good.  I realize that I  should stop deep frying things if I want to keep my "Healthy at Home" title, but maybe next week, "while in Rome", or in this case, while the deep fryer is out I'm going to 'Thelma and Louise' it in the kitchen!  Yesterday while discussing my little frying binge, a wise woman told me that a deep fried shoe would probably taste good. Probably true, but I'm going with these instead. Enjoy!

  • Spices; 2 Tablespoons of Fennel Seed, Smoked Paprika and 1 Tablespoon of Crushed Red Pepper Flakes 
  • 1 Cup of TVP, Textured Vegetable Protein 
  • Boiling Water 
  • 7 Small Red Bliss Potatoes 
  • 2 Eggs 
  • 2 Tablespoons of flour- approximately 
  • Peanut oil for deep fryer
Heat the spices in a skillet until they begin to release their aroma
super scrub potatoes and leave skins on
chop in half
pour a cup of TVP into a large mixing bowl
add the warmed spices and incorporate well

after the spices are blended in  add boiling water to hydrate- a little goes a long way
add the shredded potatoes
after all the ingredients are combined, let sit in a sieve to let the extra moisture escape-you can help this a long
by gentle pushing, you do not want to compact it too much- easy does it
add a couple of tablespoons of flour to bind it together
using two large tablespoons, form mounds
drop into a deep fryer-oil set to 375 degrees F as soon as they brown, they're done 2 minutes top-probably less
a little plain Greek yogurt compliments these nicely, sour cream also works,
