I have been vegetarian for nearly a month. When I told my mother in law, she was literally stunned! Her eyes grew to twice their normal size!   "Who will make the meatballs?"  she fearfully exclaimed.




Rest assured Ellen. I will.

Ingredients:
2-3 Portabella mushrooms
16 oz white mushrooms
1 large onion 
3 cloves garlic
1/2 tsp dry oregano
salt and pepper
1/4 stick of butter
1/4 cup quinoa
7 oz bread crumbs
1 bunch flat Italian parsely
1/4 cup Pecorino Romano cheese
1/4 cup Parmigiano-Reggiano
3 eggs



portabella mushrooms-chop 'em up

like so

saute in a little olive oil

white button mushrooms- chop

add to saute- I like to give mushrooms breathing room so they don't mush - I'm funny -give the "mush" "room"
add a little at a time


season with a little salt

add about this much of dried oregano


dice onion

add to mushrooms


cut off ends of garlic

smang it! smash it and bang it

add garlic

nice little browned edges


add a generous pat of butter- look how happy the butter is! it's smiling- that is for real! look at the left hand side of the butter-do you see the smiling face?

add 1/4 cup quinoa



distribute it well


add just enough hot water to let the quinoa open up-then cover for 5 minutes, but keep a close eye

wash and rinse a large bunch of fresh flat Italian parsley-finely chop or use a food processor- I don't mind little bits of stems

add about 1/2 of a 15 oz container of bread crumbs

grate a 1/4 cup of cheeses- I chopped off a few chunks and threw them into the processor to clean up the parsley-see image after next

combine parsley

cheese to "clean up" the parsley

add three eggs- I realize there are only two here, trust

shape into a large ball and refrigerate for a few hours

little chunks of mushroomy goodness

I first use a ice-cream scoop to get a consistent size, then roll the balls- I dip my hands in a bowl of warm water between rolls, it helps to even out the shape

bake on a lightly greased cookie sheet at 350 for 20 minutes

brush with a little olive oil, flip and bake for another 5-10 minutes

plop into your favorite marinara sauce "gravy"


make some macaroni. obviously.

eat!
