Quick Appetizer

1 box Fillo or Phyllo dough shells
8 oz of goat cheese
1 handful of fresh basil
1/2 cup of sun-dried tomatoes dry or in oil (if you use dry-blanch them first)
Place the phyllo shells on a cookie sheet and bake until golden-follow box directions-do not turn the oven off.
Pulse the basil in a food processor--add the cheese and pulse until combined- remove to a separate bowl
Spoon a half teaspoon of cheese and basil into toasted shell
Pulse the tomatoes and add on-top of the basil and cheese mixture
Top with one more dollop of the cheese and basil- return to oven until cheese melts slightly.
